Staying In: &pizza’s Recipe for the Perfect At-Home Pie

In these difficult times, it's important to find activities to do that will keep you feeling productive and centered. We can't think of a more enriching and nurturing task than cooking a delicious meal, which is why we asked &pizza to share a recipe for making their famous pie. Though the recipe below is for a classic margherita pizza, feel free to add whatever finishing touches you like to make it your own.

Dough Ingredients

∙ 1 packet active dry yeast
∙ 2 tsp granulated sugar (white sugar)
∙ 1.25 cups warm water (95 degrees)
∙ 1.75 cups AP flour
∙ 1.75 cups 00 flour (3.5 cups of just AP will work, but the 00 flour will make a nicer dough)
∙ 1 tsp salt
∙ 2 tbsp Extra Virgin Olive Oil (EVOO)

Pie Ingredients

∙  1 log fresh mozz (shredded will work if you can't get fresh)
∙ 1 - 16oz can of whole roma tomato in sauce
∙ 4 oz fresh basil (one of those herb pack things you find in the grocery store is perfect)
∙ Kosher salt
∙ Extra Virgin Olive Oil
∙ Garlic powder

 

Directions

 

1) Activate the yeast

∙ Make sure the water is 95-100 degrees F. If the water is too cool, the yeast won't activate. If it's too hot, the yeast will die. Either way, your dough won't really rise properly.

∙  Mix the yeast and sugar into the warm water and let it rest for about 5 minutes (should look foamy on the surface).

2) Start making the dough

∙ Take 1 cup of your flour and mix it with 1 tsp of salt and 2 tbsp of EVOO in your stand mixer bowl and lightly incorporate with a whisk.

∙ Give your yeast mixture a stir one last time and add it to the bowl and again lightly incorporate with a whisk.

∙ Add the remaining flour to the bowl and attach your dough hook to your stand mixer.

∙ Turn the mixer on and set it to the lowest speed and mix for 20 minutes.

∙ You will know it's done when it comes together and stops sticking to the sides of the bowl. The consistency should be tacky, but not wet.

3) Proof the dough

∙ Grease your hands with oil or cooking spray and scrape the dough out of the bowl and shape it into a ball.

∙ Place this ball into a new bowl that has been lightly greased with oil or cooking spray.

∙ Mix the ball around the bowl a bit so the entire dough ball is covered with oil.

∙ Cover the ball of dough with plastic wrap or a lint free towel and let it rest for 45 mins up to an hour and a half in a warm spot.

∙ Once it's doubled in size, it's ready.

4) Shape the dough

∙ Press down on the dough slightly in the bowl to release some air and then turn it out and place it onto a lightly floured surface

∙ Cut the dough in half and cover each half with plastic wrap or a lint free towel and let rest for 5 minutes.

∙ Begin to work the dough and flatten it out into a 12" circle or whatever shape you desire. You could also do this directly into a pizza pan or on a stone if you have one. Make sure to spray your pan with cooking spray or grease with oil. Cornmeal or semolina flour is also a great method to prevent the dough from sticking.

5) Bake the pie

∙ Top your pizza with your desired toppings and bake at 475 degrees F for 15-18 mins, making sure to rotate the pizza halfway through, until the crust is golden brown and the cheese nice and melted.
